Description

Roxana Walker is no ordinary farmer. She describes herself as “a geeky scientist who just happened to get into mushrooms.” A chemist by trade, she has worked as an air-pollution specialist for the state for over twenty years. She became interested in growing mushrooms after learning about their uses in eastern medicine. She signed up for a course with Paul Stamet, a renowned Washington mycologist, who uses mushrooms to remove toxins from soil. When she returned home to Sacramento, Roxana decided to grow tasty oyster and shitake mushrooms. She built her own incubation room and greenhouses and, in 2000, started Dragon Gourmet Mushrooms.

In 2011, she and her partner, Sabina Monteiro decided to "go big or go home". DGM now resides in commercial space in the heart of the ""River District".

These ladies are so cool! The mushrooms are GREAT and the prices are not to be beat. It seems like they just really love doing what they do, which shows clearly through their business and product. I don't even buy mushrooms from anyone else anymore... I find them at the farmer's market on 8th and W in downtown every week. Thanks guys!

Let me start by saying that I don't like mushrooms. Or, I should say, I didn't think that I did.

I've walked past the Dragon Mushroom stand at the Roseville Framer's Market about 20 times and never gave it a second glance. Well, on Feb 14, as I walked by, the person working there smiled at me and said that she was running a Valentines special- buy 2 get 1 free (or something like that). My wife likes mushrooms, and I was cooking up some steaks for dinner so I thought, why not?

I don't remember the name of the mushrooms I bought. They were really tiny with white stems and light brown cap. I sauteed them in oil with some shallots, added a bit of beef stock and white wine, and then, at the end, finished with a little bit of half-and-half. Served them over the top the steaks.

So, long story short, I loved mushrooms. I ate almost all of them.
