Food is meant to nourish, but there are instances when its safety is compromised.
About one in six Americans gets sick every year from food poisoning. This sometimes causes bouts of diarrhea and vomiting that go away without medication. More serious cases of food poisoning can cause blindness, neurological impairment, organ failure, paralysis, stillbirths, and even death, Dr. Joseph Mercola warns.

After reviewing data on the 14 pathogens that cause 95 percent of food-borne illnesses, the researchers found that contaminated meat products, including, poultry, deli meat, and pork are the most likely sources of food poisoning.
Here are the most common foods and pathogens that are most likely to cause food poisoning:
1. Poultry Contaminated with Campylobacter
(600,000 cases of illness and 7,000 hospitalizations yearly)
Tainted poultry was found to be the most frequent source of food poisoning, racking up about 2.4 billion dollars in health care costs. Chickens and turkeys normally harbor the campylobacter bacteria in their digestive tracts without becoming ill.
They are given antibiotics, so the bacteria that survive become antibiotic-resistant. Campylobacter is found on dead chickens in slaughterhouses, commercial poultry products, and outside the packaging of supermarket chicken, where it can easily infect your family.Campylobacter causes abdominal pain, cramping, diarrhea, and fever within two days of exposure to it. Most people who suffer from campylobacter food poisoning recover on their own without treatment within two to five days, as long as they drink a lot of fluids to prevent dehydration.
A rare and serious complication of campylobacter isGuillain-Barré (G-B) syndrome, a relatively rare autoimmune neurological disease that can cause paralysis. Other bacteria can trigger G-B syndrome, but campylobacter is thought to be responsible for nearly half of all G-B cases in the U.S.Infections caused by antibiotic-resistant campylobacter have become more dangerous and difficult to treat. The Centers for Disease Control (CDC) estimates there will be about 845,024 campylobacter infections in 2011, with 76 people dying and about 8,463 requiring medical attention.
Your stool needs to be tested to determine if you have campylobacter as opposed to another food-borne infection like Salmonella.
2. Pork Contaminated with Toxoplasma
(35,000 cases of illness, 2,000 hospitalizations, and 327 deaths yearly)
Toxoplasma gondii is one of the world’s most common parasites. Toxoplasma infection or toxoplasmosis is usually associated with exposure to contaminated cat feces, but according to the CDC, 50 percent of toxoplasmosis cases are now food-borne.Pork and beef are the two meats most likely to be contaminated with toxoplasma.
You can get sick from toxoplasma if you consume or handle contaminated undercooked meat, fruits and vegetables, or contaminated water.
Toxoplasmosis infection is asymptomatic (causes no symptoms) in most healthy people because their immune system prevents the parasite from causing illness. The CDC estimates that 23 percent of Americans and up to 95 percent of some populations in other countries have been infected by toxoplasma.When toxoplasma symptoms do occur, they may include fatigue, fever, muscle pain, rashes, sore throat, and swollen glands.
First-time toxoplasma infection is particularly dangerous to pregnant women because it can cause miscarriages, premature births, and severe illness and blindness in newborns. Expecting mothers should avoid exposure to cat feces, cat litter, or potentially contaminated food, soil, or water.
But if you have been exposed to toxoplasma in the past and did not experience any symptoms, this makes you immune to the infection.

3. Deli Meats Tainted with Listeria
(600 hospitalizations and more than 100 deaths yearly)
You can get listeria infection or listeriosis from consuming raw contaminated vegetables, meats, and dairy products. Listeriosis is generally a mild illness in healthy people and causes few or no symptoms, but it can be dangerous to people with weak immune systems and pregnant women.
Listeriosis can cause miscarriage, premature delivery, infection, or death to a newborn.
Cooking generally kills listeria. But the report found that deli meats have the highest risk of listeria contamination because ready-to-eat foods can become tainted when they are packed after cooking. The report warned that supermarket deli meats are five times more likely to be contaminated than prepackaged deli meats.
