I adore making snacks and treats that are delicious, nutrient-rich, simple to make, and easy to take on the go to fuel my body and fit into my busy lifestyle. Since I always keep homemade coconut butter, organic rolled oats, gluten free grains, nuts, seeds and dried fruits in my pantry, I decided to put them together to make a yummy homemade chocolate coconut protein bar with dried blueberries, dates and currants. These no bake bars are chewy, creamy goodness that is loaded with my favorite superfoods that will help you stay energized and radiant!

These homemade chocolate coconut protein bars are the perfect summer treat because you can whip up a batch in minutes and pop them in the refrigerator to enjoy whenever you want. During the summer all I want to do is make lots of healing foods recipes that don’t involve turning on the stove or oven. With all the gorgeous warm weather and sunshine who has time to be standing over a hot stove cooking? I use this extra time to go roller blading at the beach, eat out at my favorite restaurants, grill outdoors, go shopping at the farmer’s markets and see all the latest movies like Jurassic World. By the way this movie rocked!

These bars are also wonderful to eat for a quick and satisfying breakfast on the go. Pair them with my superfoods cinnamon coffee latte or a cup of green tea for a great start in the morning. I would much rather have these bars then eat some sugary processed cereal or fast food breakfast that is full of preservatives and unhealthy ingredients that will spike your blood sugar, make you tired and set you up for cravings more refined sugar and carbs later in the day.

In today’s recipe I used an awesome sustained energy cereal blend and added hemp protein powder, essential oil, raw honey, vanilla extract, cinnamon and my recipe for chocolate honey coconut butter. This tasty gluten-free cereal has gluten-free rolled oats, pumpkin seeds, chia seeds, amaranth seeds, quinoa seeds, ramon seeds, dates, dried blueberries and currants. This fantastic cereal can be used hot or cold and it provides 6 grams of plant protein, 6 grams of fiber, and 1200 mg omega-3 fats with no refined sugar or gmo’s.

Chocolate Coconut Protein Bars Recipe

Gluten-Free, Vegetarian, Dairy-Free, Refined Sugar-Free

Makes 8 Bars

Ingredients: 

  • 1 ½ cups cereal blend or gluten-free organic rolled oats
  • 1 scoop hemp protein powder (I used this brand)
  • ¼ teaspoon Himalayan pink salt
  • ¼ teaspoon Ceylon cinnamon (I used this brand)
  • ¼ cup hemp seeds (I used this brand)
  • ¼ cup freeze dried organic blueberries (optional use only if making the recipe with the oats)
  • 2 pitted dried dates chopped into small pieces (optional use only if making the recipe with the oats)
  • ¾ cup chocolate coconut butter (here’s my recipe or you can buy it on Amazon)
  • 1-2 tablespoons raw honey
  • 2 tablespoons filtered water
  • 2 ½ teaspoons pure organic vanilla extract
  • 3 drops dōTERRA wild orange essential oil (click here to get the oil)-optional
  • 1 organic dark chocolate bar-optional (melt before drizzling on the bars)

Method:

1. Line an 8 x 8 baking pan with parchment paper and set aside.

2. In a medium bowl, mix together cereal blend or rolled oats, hemp protein powder, pink salt, Ceylon cinnamon and hemp seeds. If using dried blueberries and dates with the rolled oats add them in and stir well.

3. Add chocolate coconut butter, 1 tablespoon of honey, the filtered water, vanilla extract and wild orange essential oil if using into the bowl and blend together until the mixture holds together when pressed between two fingers. Taste bars and add the remaining tablespoon of honey if you want a sweeter bar.

4. Press bar dough evenly into your prepared baking pan and cover the pan with foil. Place the bars into the refrigerator and chill until firm for around 1 hour. Pull chilled bars along with the parchment paper attached out of the pan and cut into even sized bars with a sharp knife. Drizzle with the melted dark chocolate bar if using and enjoy a bar immediately or remove the parchment paper and place all the bars into an airtight container in the refrigerator until you want to eat one. Try the dark chocolate for a more decadent version if you’re big chocolate lover.
