3 Delicious Cold Soup Recipes to Keep You Cool This Summer Hot

When most people think of soup they think of hot soup – the ultimate heart-warming comfort food for the soul. But soup can be enjoyed in the summer, too.

Here are 3 of my favorite cold soup recipes that are versatile, healthy, and can be made in minutes. My favorite part is that there's no cooking involved.

Cold and Spicy Gazpacho

There's a Spanish saying, "De gazpacho no hay empacho" that means "You can never get too much of a good thing". But literally it says "You can never get too much gazpacho." I agree!

Here's a gazpacho recipe I've fine-tuned over the years. It makes a delicious lunch or refreshing side dish with dinner. You can even have it for breakfast instead of juice.


· 1 cucumber

· 1 bell pepper (any color will do)

· 1 small bunch of scallions

· 3 medium size tomatoes (or one can of diced tomatoes)

· 1 can of tomato juice or vegetable juice (12 oz.)

· 1 garlic clove

· 1 tablespoon red wine vinegar

· 2 tablespoons extra virgin olive oil

· ¼ teaspoon cayenne pepper

· 1 drop red pepper sauce

· 1 tablespoon parsley (fresh or dried)

· 1 tablespoon chives (fresh or dried)

Preparation Instructions

· Peel cucumber and slice all vegetables into large chunks. Set two scallions aside for garnish.

· Put all ingredients in a blender and blend to desired consistency. You can leave it chunky or blend until smooth.

· Serve cold and top with finely sliced scallions.

Use your imagination for toppings - avocado slices, chives, parsley, finely chopped cucumbers, or cilantro - all make beautiful garnishes for this soup.

This gazpacho is moderately spicy. Adjust the amount of cayenne and red pepper sauce up or down according to taste.

Cucumber Coconut Milk Soup

This uber-cooling soup contains two kinds of coconut milk – the milk-like kind you'll find in a carton and the thick and creamy kind found in a can.


· 2 cucumbers

· ½ cup coconut milk (plain)

· ¾ cup canned coconut milk

· Juice of one lime

Preparation Instructions

· Peel cucumber and slice into large chunks.

· Combine all ingredients and blend until smooth.

· Optional garnishes include shredded or flaked coconut, finely sliced cucumbers, or dill.

Cucumber Melon Soup

You can serve this soup as a starter but it's so delicious you can serve it for dessert.


· 1 cucumber

· 2 cups cantaloupe cubes (or other melon of your choice)

· ¼ cup plain Greek yogurt (full fat version works best)

· ½ teaspoon fresh lemon or lime juice

· ½ cup cold water or crushed ice

Preparation Instructions

· Peel cucumber and slice into large chunks.

· Combine all ingredients and blend until creamy.

· Garnish with toasted sliced almonds or fresh chopped mint.

If you are serving this soup for dessert, you may want to add a touch of your favorite healthy sweetener.

These three soups make great use of foods that are inexpensive and plentiful this time of year in both your garden and at your local farmer's market. And they add a touch of elegance to every meal.
