Baked Crumble with Yogurt and Fresh Berries Hot

This Baked Crumble with Yogurt and Berries is super easy to make and works perfectly as a light snack or an elegant dessert for your next dinner party. The recipe below calls for Strawberries, Raspberries and Blueberries but feel free to substitute whatever is in season and fresh locally. We highly recommend finding a farmers market near you and getting to know a few local organic farmers. That way you'll have the best, healthiest choices!

We recommend you using an organic, non-GMO yogurt that free from rBGH
(rBGH is a genetically engineered artificial hormone injected into dairy cows to make them produce more milk). Here's a partial list of non-GMO dairy processors in the USA.

Ingredients: Serves 1

Per serving:

  • 150g Plain Yogurt (about 2/3 cup)
  • 2-3 x Strawberries
  • 8 x Raspberries
  • 10 x Blueberries
  • Sprinkle of Goji Berries

Baked Crumble (serves 3)

  • 1/2 cup Rolled Oats
  • 1 x Tablespoon Raw Pistachio Kernals, roughly chopped
  • 1 x Tablespoon Coconut Sugar
  • 1/2 teaspoon Cinnamon
  • 1 x Tablespoon Coconut Oil

Method:

To make the Baked Crumble:
Preheat oven to 160’C (320’F) - Combine all ingredients in a bowl and mix well. - Line an oven tray with baking paper and spread the mix out evenly. - Bake for 15-20 mins or until slightly crunchy. (It will crunch up more once it has cooled) - Remove from oven and allow to cool on tray

Assemble the dish by layering the yogurt with a sprinkle of each type of berry and use a 3rd of the crumble made per serve. We served ours in a glass so you can see all the layers.

Note: Any left over crumble can be kept in an airtight container for up to a week! Alternatively, to make one serve of the crumble, use a 3rd of the ingredients listed. Enjoy !
